So, I've promised to make MOB the most delicious dinner he's ever had in his entire life. Ever. (Blogger's note: While we're at it, I'm kind of tired of the whole "MOB" thing. You know what? His name is Rob. R-o-b. Rob.)
So, Rob, will be eating my mama's delicious chicken enchiladas, of which she's shared the recipe with me.
I've kind of put a lot of pressure on myself by telling him it'll be the most delicious thing he's ever eaten, but hey, I work well under pressure.
I thought I'd share the recipe here. I'm not much of a foodie, although I'm a recovering Food Network addict, but I know there are a lot of you out there.
(1) whole chicken, cooked and chopped
(1) can of chopped green chiles
(1) 8oz package of cream cheese
(2) cans of enchilada sauce
(1) package of soft tortilla shells
(1) package of shredded cheese
After boiling the chicken, chop it to small pieces once it's cooled down. Meanwhile, preheat the oven to 350 degrees.
Mix the chopped chicken with the green chiles and cream cheese. Spread the mixture evenly in the shells, and roll.
Pour one can of enchilada sauce into the bottom of a 13x9-inch baking dish, and lay the rolled enchiladas on top. Pour the second can of enchilada sauce over the enchiladas, and top with shredded cheese.
Bake in the oven, uncovered, for 45 minutes.
AND THEN EAT THEM ALL. With sour cream.
